Oatmeal is one of those comforting and easy comfort breakfasts that people tend to miss on the Paleo diet. The best way to give up something you really like is to substitute it for something you like just as much.
This sweet, creamy, grain-free version of oatmeal can be prepped in a couple of minutes and is a great way to use over ripe bananas. It mimics the texture and creaminess of real oatmeal and is sweetened naturally with banana.
You can top this oatmeal with your favorite oatmeal toppings, like nuts, fruit or cinnamon. I topped mine with salty trail mix and cardamom.
You can even add apple sauce or pumpkin puree to this mix, to fight the enemy of healthy eating…. boredom!
Heat it up, chill it overnight or eat it for dessert. It only requires 3 ingredients to make. The rest is up to you to personalize.
