Green smoothies are all the rage now, but it does a body good to change up the color scheme. You can’t argue with the health benefits of green veggies like kale and spinach in your smoothie but too many of these greens aren’t great for you either. They contain oxylates, which you can read about here.

Why not switch up the veggies in your green smoothie by making a salad shake.

The star of this shake is the beet, which is responsible for it’s brilliant color and antioxidant content. The supporting cast are carrots, cucumbers and blueberries. Nutritional powerhouses on their own.

You need a powerful blender to make this, so if you want to try this, make sure your blender is up for the job. If not, you can use a food processor instead.

This is one of the best smoothies I’ve ever had, and I’m not even a huge lover of beets.

The reason I call it a salad shake is because it’s mainly made up of whole veggies, and sweetened by ripe bananas. Super food blueberries add rich color and even more nutrition.

Including the fibrous part of the fruit instead of just the juice, helps regulate the body’s insulin response and blending the raw veggies make them easier to digest.

Ingredients:

Chop up one red or golden beet

Chop up a large carrot

Chop up a large cucumber

8 ounces of coconut water or plain water

3 overripe bananas

1 ½ cups of frozen, organic blueberries

How to

The directions are easy, just put all the ingredients in the blender and blend! And don’t forget to wipe off that red mustache after drinking.
