Chicken schnitzel, sweet potato gravy & flatbread

Maple Sweet Potato Gravy with chicken SChnitzel and Flatbread.

My attempt to make chicken and waffles failed. We used an ancient waffle maker and it was a disaster. That’s why I turned around and bought this awesome waffle machine after my meal was done. (Note: this recipe was made over a month ago and since then I’ve been enjoying my new waffle iron like crazy. Check out my waffles here).

But I saved dinner by making chicken schnitzel and flatbread instead. But the definitive star of the meal was my maple sweet potato gravy made with gut healing bone broth and maple syrup. I couldn’t get enough of this stuff.

So what’s schnitzel? It’s the German name for a breaded chicken or pork cutlet. It’s my husband’s favorite dish so I always need to step up my game while preparing this or he will complain.

The trick to making schnitzel is to cut the chicken breast in half and pound it into a thin sheet with a meat mallet for quick frying. This is the one I used. It has a meat tenderizer on the other side, which I use to remove the rubbery texture from skirt steak.

Ingredients for chicken schnitzel

Salt, paprika, cayenne
1 Egg
almond flour
tapioca or arrowroot flour (I used this one)
Crushed kale chips (You can buy them here)
Cooking oil of choice (I use Organic Pork Lard)

How to

Cut chicken breast in half lengthwise so it is half the thickness and pound the breast slices with a meat mallet until it’s thin.

Dredge in arrowroot or tapioca powder first, then dredge in scrambled egg and then finish with almond flour and crumbled kale chips or coconut. I used 3 separate bowls for this and mixed the almond and kale together.

Fry in a pan on high heat in a generous amount of oil. I used lard but you can use butter, ghee, coconut oil or your fat of choice. Because they are thin, they will get done fast, but since it’s chicken, you want to slice one piece in half to make sure it isn’t pink inside.

(Waffle-fail) flat bread Ingredients

It’s so fabulous that waffles didn’t work out because I made this flatbread instead. I came up with the recipe through intuition. I didn’t want to sweeten it like a traditional waffles because the gravy is sweet. You can use this recipe to make waffles or for flat bread just spread it thin on a cookie sheet and bake for 20 minutes on 350.

Ingredients
3 Tablespoons of coconut flour
1 Tablespoon of arrowroot (I used this one)
1 cup of blanched almond meal
2 eggs
3/4 to 1 cup of milk of choice (I used cashew milk)
2 Tablespoons of grass-fed butter, melted

How to
Mix ingredients in a bowl and spread dough on a parchment lined baking sheet and cook in a preheated oven for 20 minutes on 350.

Now onto my favorite part of the meal….

Maple Sweet potato Gravy ingredients

1/3 onion, chopped
1 Tablespoon of maple syrup
1 teaspoon of salt
2 garlic cloves, crushed and chopped
1 cup of precooked, mashed sweet potato
1 T of arrowroot
1 cup of beef or chicken broth
optional: 1/2 slice of bacon, chopped
cooking fat of choice to saute the onions & garlic (I used Organic Pork Lard)

How to

Saute onions in cooking fat of choice.

Add garlic once the onions look cooked through and saute for a minute or two, taking care not to burn the garlic.

Optional: throw in once sliced piece of bacon for extra flavor and richness, and cook with the garlic.

Add chicken broth and heat for a few minutes. Throw in sweet potatoes and stir to mix together.
