Flourless cashew cookies

Cashew Curious

I’ve been curious if cookies baked out nothing but nut butter and eggs would stick together and come out like cookies. So I finally put it to the test. I usually like to make up my own unique creations, but I also sometimes enjoy participating in a grain-free experiment.

This was one of my experiments and the recipe was from Alllrecipes.com for Paleo cashew cookies

Of course I couldn’t follow the recipe exactly, using it as a guideline and substituting my own ingredients like these….

Ingredients

1/2 cup of cashew butter

1 tablespoon of coconut butter

1 egg

Handful of pumpkin seeds

1 tablespoon of honey

golden berries

cocoa nibs

How to

Just mix ingredients in a bowl by hand or with an electric mixer and bake at 350 for 13 minutes. I like to line the cookie sheet with parchment paper so they don’t stick.

I didn’t love them. They came out looking dry like meringue.

But they were a bit chewy in the center. They were also pretty hard to stir in by hand because the cashew butter was so thick. You could substitute almond butter or sunflower seed butter in these.

But otherwise it was really easy to make and minimal ingredients and time invested.
And even though they weren’t a favorite, they were still good. Cookies are treat for us, so let’s just say that they didn’t go to waste!
